Grain Free Brownies - A Healthy Choice
Ingredients:
36 plump pitted Medjool dates. (Inspect inside pit area for mold).
¼ C warm water
1 C peanut butter
2 TBSP melted coconut oil
⅔ - ¾ C cacao or unsweetened cocoa powder
1 C chopped walnuts
1 tsp vanilla extract
Pinch of salt
Directions:
Add dates to the food processor. (depending on your food processor - this might need to be done in batches). Blend the dates until a ball forms. If your food processor has a hard time with this - it can be due to the dates being old - in this case, soak dates in warm water 10 mins and then drain off water and try again.
Once blended, use a spoon or rubber spatula and spread mushed dates around the bottom of the food processor. Now add ¼ C warm water. Blend again, scraping down sides as needed.
Add peanut butter, melted coconut oil, cacao powder, vanilla and salt. Blend again until well mixed.
Mix in walnuts by hand.
Spread the mixture into a parchment lined 8” X 8” pan. (I also spread a little coconut oil onto parchment - I’m not sure this is necessary.)
Bake at 350 on the centre rack of the oven for 15 - 16 mins. The edge should be slightly dry. Remove from the oven and let cool for 30 mins before enjoying. The longer they cool, the firmer they become.
